Chicken fat (schmaltz)
Many Jewish families (even those that didn't keep kosher)
had a jar of schmaltz in the fridge and used it like butter

So, Aunt Josephine, who wasn't really my aunt had a house in Westmont, NJ with two kitchens. She used one kitchen for her everyday cooking and the other kitchen for long-term cooking and preserving. I thought she had two kitchens because she was Italian and liked to cook and feed people, which was true. It didn't occur to me until some time later that she must have bought the house from a Jewish family that kept kosher and maintained separate kitchens because they were scrupulous or they found it more convenient and they could afford it. I can image Aunt Josephine looking over the house and deciding it was perfect when she saw the two kitchens. She would have instructed her husband to make an offer right then to pre-empt another buyer.
